semi-homemade, but not too shabby.

Last night, there was more emergency cooking to be done.

Except, it was more like desperation cooking.

I didn’t want to order in since I’m doomed to a diet of hotel food the next two days, and I didn’t want to leave my house, because it was cold, really.

I know, I’m going to have to get used to it.

Ky came down with a cold, so I was riding solo for the night, with the following ingredients:

sweet potatoes, herbs, one onion, and some random cheeses.

Not too impressive.

It was then that I remembered that I had an entire case (purchased from Costco, of course) of this:


Surely I could do something with delicious mac and cheese as my basis.

So I turned up the oven to 425, threw in two sweet potatoes, and then did some yoga, Jillian Michaels style.

When I finished my last sun salutation, I headed back into the kitchen, where I boiled water for the mac and cheese, and then chopped up some sage from my deck garden and sliced my last onion.


I threw the onions in a pan with some olive oil, and then, for good measure, threw in some balsamic vinegar for good measure.


At this point, I pulled the sweet potatoes out of the oven, scooped the insides out into a pot, and added the cheese packets, some milk, some sour cream, and then took my new immersion blender to the whole thing.


I stirred in the onions and sage by hand, so they didn’t get pulverized, and then tossed the macaroni with everything.


Not too shabby, if I don’t say so myself. And while I felt more Sandra Lee’s semi-homemade than Julia Childs, this is the way the end of the pantry shakes out in this house, and it was pretty delicious.

Now, I’m off to ready myself for tomorrow’s trip to Orlando- have a lovely Friday chickens!

  1. I did some desperation cooking myself last night. Your mac and cheese looks awesome! I love the addition of sage and sweet potatoes. It looks much better than the unimpressive plate of pasta I made. I devoured it anyway, of course. 🙂
